A take on the flip, using brown butter fat-washed rum! Rich, butterscotchy, coffee-y, tasty!

 2 oz Fat-washed Aged Rum(Appleton Estate)
 0.50 oz Mr Black Coffee Liqueur
 1 oz Simple Syrup (2:1 demerara or turbinado sugar)
 1 Whole Egg

For fat-washed rum:
125g unsalted butter
375ml aged rum
1. Heat butter on medium-high until browned (it'll turn brown and emit a nutty smell)
2. Add browned butter into rum. Agitate it thoroughly (immersion blender, hand mixer, etc)
3. Let it infuse for about an hour, then put it in the freezer. It will, after a couple hours, form a sort of butter-puck at the top.
4. Pierce butter puck and strain through cheesecloth or nut milk bag, etc
5. You can use the butter for other purposes if desired, or discard it

Dry shake all ingredients

Shake with ice; strain into desired glass

Grate chocolate over the top for garnish
