Chocolate Orange Old Fashioned

Putting a creative spin on the classic old fashioned recipe, we played with this drink's flavour balance: sweet oleo sacchreum is balanced with bitters and Mr Black and a strong botanical rum that is reminiscent of a mulled wine. This drink pairs brilliantly with chocolate, and puts us in mind of the British classic holiday stocking stuffer, a Chocolate Orange!

 2 oz Botanical Rum
 0.50 oz Mr Black Coffee Liqueur
 3 dashes Angostura Bitters
 4 drops Chocolate Syrup
 0.25 oz Orange Oleo Saccharum

Make the chocolate syrup with 2 cups coconut sugar, 1 cup water, 2 tbsp unsweetened cocoa powder, and 1/2 a chocolate bar. Add all ingredients to a medium pot and heat on the stove until boiling. Simmer for a few minutes until sugar is dissolved. Set aside to cool.

Combine all cocktail ingredients except for orange peel into a mixing glass and stir until well diluted.

Using a strainer, pour the contents into a glass filled with ice.

Garnish with an orange peel.
