Armchair Sunshine

This is a comfortingly sweet and silky drink, balanced by bitters and bittersweet coffee liqueur. The dark caramel and slight coconut notes of the black rum are deliciously rich companions for roasted coffee flavour, while apricot, vanilla, and the spices that come through from the bitters bring to mind spiced apricot pie or crumble. That combination of Jamaican rum and coffee-and-cake flavours is the inspiration for the name. A certain sunniness is also provided by the lemon juice and oils, brightening and adding another layer of aroma.

 45 ml Black Rum (Blackwell Fine Jamaican Rum)
 22.50 ml Mr Black Coffee Liqueur
 10 ml Apricot Brandy
 10 ml Angostura Aromatic Bitters
 15 ml Lemon Juice
 10 ml Vanilla Rich Syrup
 15 ml Egg White (approx. half an egg white)

Add all ingredients to a shaker, and dry shake, then shake with ice.

Strain into a Nick & Nora or other small coupe glass.

Express lemon oils on top, and garnish with a lemon twist.
